Students will study all of the following: 

• Various types of icing and their applications
• Piping techniques
• Producing a variety of different cakes
• Producing a variety of different biscuits
• Moulding techniques
• Cake coverings
• Applications of royal icing
• Flood Icing
• Gateaux and tortes 

This course is 70% practical & 30% theory, with a mix of planning, practical baking and decorative workshops.

These lessons will end with an element of peer assessment, written observation and write up of the learnings they have received. This covers a variety of units , each worth points towards the end qualification. 

There are no formal entry requirements for this course. However, this course imay be suitable for the following:
